Head Pastry Chef

Summary of Responsibilities:

Reporting to the Executive Chef,responsibilities and essential job functions include but are not limited to thefollowing:

  • Consistently offer professional, friendly and proactive guest service while supporting colleagues
  • Lead the quality/quantity of the Pastry department while continuously moving the offering forward with Current trends and innovative Pastry offerings, as well as coordinate the production as it relates to banquet and restaurant functions
  • Maintain the highest level of culinary standards through creative and personalized menu development
  • Develop new dessert, pastry, guest amenities and bread products
  • Conduct daily shift briefings to Colleagues, as well as participate in monthly communication meetings
  • Follow payroll costs and productivity within budgeted guidelines
  • Prepare food requisitions in a timely manner & ensure that food order items required for department are communicated to the kitchen leadership team
  • Seek opportunities to increase food revenue, decrease kitchen expenses and maximize departmental productivity without compromising our guests satisfaction
  • Provide training for new colleagues, as well as coach and develop the current team by providing ongoing and continuous performance management
  • Ensure the cleanliness and maintenance of all work areas, utensils, and equipment, according to provincial regulation, including continuous follow up on Health Inspections and bi Yearly Eco sure inspection
  • Follow kitchen policies, procedures and service standards
  • Follow all safety and sanitation policies when handling food and beverage
  • Ensure a working environment that is safety focused
  • Ensure all allergy concerns are addressed and dealt with properly and personally meet dietary guests as required
  • Other duties as assigned



  • Previous leadership experience in a Pastry production required
  • Minimum of 5 years of well rounded pastry experience is required
  • Diploma/Certification in a Culinary discipline required
  • Valid trade certification/Journeyperson papers/Red Seal or equivalent is required
  • Valid Alberta Driver's Licence is required
  • Strong knowledge of all current dessert, breads and pastry offerings
  • Strong knowledge and application of wedding cakes, sugar and chocolate work required
  • Computer literate in Microsoft Window applications, as well as basic understanding of food purchasing systems
  • Must be passionate about all pastry skills as associated within a luxury brand and high volume operations and able to stay current with new trends in industry
  • Strong interpersonal and problem solving abilities
  • Excellent communication skills, both verbally and written
  • Highly responsible & reliable
  • Ability to work well under pressure in a fast paced environment
  • Ability to work cohesively as part of a team
  • Ability to focus attention on guest needs, remaining calm and courteous at all times
  • Ability to work flexible hours
