Hotel Food & Beverage Manager

Scope of Job:

The Food & Beverage Manager will be responsible for, and will and oversee, the whole Food & Beverage operation within the Hotel.

Responsibilities:

1. BUSINESS IMPACT/RESULTS

· Demonstrate business acumen through delivery of results.

· Monitor, analyze and respond to the changes in cost of goods to ensure we are offering our guests high quality products, whilst contributing to a profitable hotel.

· Drive the Food and Beverage department in delivering or exceeding budgeted targets.

· Support and lead the Food and Beverage team in all initiatives regarding satisfaction: mystery shopper, hygiene and grooming.

·Work closely with the Corporate Sales Manager to deliver what is required for the corporate bookings.

2. CREATIVITY

· Aside from running a successful Food and Beverage operation, ensure there is an emphasis on guest interaction, with families and children in particular.

· Explore all revenue streams within the hotel and link in to the overall Food and Beverage strategy for the hotel.

· Explore extra revenue opportunities with our Park guests and work closely with the Park Food and Beverage team to avoid any conflicts of interest and to overcome any operational issues.

· Consider new and innovative ways to deliver and present the Food and Beverage and Conference & Banqueting offering in the hotel to increase levels of revenue and guest satisfaction.

3. COMMUNICATION

· Liaise and work with the Park's Food and Beverage team and the Merlin Group Commercial Team to share ideas, concepts and secure bigger and better deals.

· Work, and develop relationships, with external suppliers to ensure LEGOLAND Windsor Resort has both the very best reputation within the industry, and receives the service required to ensure that the operational Food and Beverage team can deliver the highest quality product, and the targeted financial return.

· Work closely with the Warehouse Manager to ensure correct stock levels are available from the Warehouse.

4. DECISION MAKING & AUTONOMY

· Responsible for driving spend per head/sales, without jeopardising guest satisfaction and quality whilst keeping within the budgeted labor lines.

· Monitor and respond to expenditure associated with catering equipment repair.

6. MANAGING RESOURCES

· Effective management of budget.

· Effective use of department resources.

· Take responsibility for the back of house administration of our POS system, being or appointing a super user, producing reports based on sales mix, anomaly tracking, till screen set up, additional sales item set up and monitoring the correct use.

· Work closely with the Loss Prevention team to minimize any losses to the business.

· Manage the asset register for Hotel Food and Beverage equipment/assets.

7. COMPLEXITY & PROBLEM SOLVING

· Creative ideas for delivery of guest satisfaction and operational targets.

· Demonstrate an awareness and knowledge of the latest trends in food nutrition for our target audience and contribute to the ongoing nutritional developments.

8. HEALTH & SAFETY

· You are responsible for all aspects of Health, Safety & Security within your team, in line with the Group Policy (HS001). In particular, you must ensure that risk assessments have been carried out, that safe working procedures are in place for all work activities and that all employees you are responsible for are aware of the Group Health, Safety and Security Policy and their obligations under it. You must ensure that safe working practices are monitored and that risk assessments and procedures are reviewed regularly. Where incidents do occur, you must ensure that they are investigated appropriately and that where necessary, corrective action is taken to ensure that such incidents are not repeated.
