Principal Duties and Responsibilities (*Essential Functions)

  1. *Work in different kitchens to gain knowledge of the preparation of food, completes the Culinary Academy within 6 months.
  2. *Maintain a high standard for personal hygiene and sanitation.
  3. *Maintain clean and safe working environment
  4. *Strive to perform duties of all positions within the kitchen.
  5. *Perform opening and closing duties and side work as assigned.
  6. *Volunteer to assist other team members as needed.
  7. *Learn to operate and clean all equipment used in department safely.
  8. *Maintain a courteous and helpful relationship with internal and external guests.
  9. *Perform duties quickly and efficiently.
  10. *Perform cleaning of coolers, freezers, and other storage areas as assigned.
  11. *Assist in storing and rotating of all inventories as needed (FIFO).
  12. *Participate in scheduled training and random testing for evaluation and coaching purpose.
  13. Based on business needs, may be required to work at other venues as assigned.    
  14. Ensure full compliance with departmental Internal Controls, policies, procedures, and regulations.
  15. Other duties as assigned.


  1. High school diploma or GED, preferred. 
  2. Minimum of two years culinary experience, or culinary school preferred, ServSafe certified.
  3. Basic knowledge of understanding fryers (oils and their temperatures), grill simple meats (hamburgers, hot dogs), basic oven uses (bake chicken, fish).
  4. Demonstrate advanced knife skills.
  5. Demonstrate advanced product knowledge (produce, meat, and seafood identification).
  6. Knowledge of understanding complex salad construction and cold food preparation.
  7. Ability to understand and perform job assignments.
  8. Ability to understand and follow recipes and other directions.
  9. Able to work independently with reasonable supervision.
  10. Maintain a positive attitude towards each guest and fellow employee and participate in a strong team effort.
  11. Ability to communicate effectively with co-workers and management.
  12. Requires prolonged periods of being on their feet.
  13. Light/moderate/heavy lifting is required (up to 80 pounds).
  14. Required to stand, walk, and talk or hear.  Required to use hands to fingers, handle, or feel objects, tools, or controls; climb or balance; and stoop, kneel, crouch, or crawl; reach with hands and arms.
  15. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception, and the ability to adjust focus.   


Working Conditions
The noise level in the work environment is usually moderate to loud.  When on the casino floor, the noise levels increase and it is not smoke free.
