Summary                                                          

Oversee the daily operations of the fine dining steak and seafood restaurant, ensuring a seamless and exceptional guest experience. Foster a culture of ongoing training and communication, while actively supporting the professional growth and development of all staff members.

 

Essential Duties and Responsibilities include the following. Other duties may be assigned.

  • Promote Cache Creek Casino Resort in a positive manner, practice the RICH philosophy.
  • Firm, fair and consistent leadership, communication, and interpersonal skills are essential.  Apply policies and procedures in a professional manner.
  • Manage all administrative duties including scheduling of staff, performance reviews, attendance, exception and variance tracking, daily shift reports, checkbooks, coaching and counseling, interviewing, hiring, and terminations.
  • Must have considerable wine, beer and cocktail knowledge.
  • Continuously review operations; identify any problems, concerns, and opportunities for improvement; assess staff performance, provide frequent coaching, and constructive feedback.
  • Train and develop staff on guest service standards and principles, effective communication and sales techniques, RBS alcohol awareness and sanitation best practices.
  • Conduct daily walk-through of facility; focus on aesthetics, organization, compliance and preventative maintenance. 
  • Master the point of sale, requisitioning, table management, and time and attendance systems.
  • Maintain accurate inventories of all beverage and service supplies and equipment. Order products as needed.
  • Develop and manage budgets to ensure profitability and effective cost control.
  • Monitor sales, expenses, and inventory levels.
  • Review the monthly P&L financial report, research any irregularities, make recommendations and complete the P&L Variance Report.
  • Perform table visitations with guests.
  • Attend scheduled meetings and required training.

Supervisory Responsibilities                                                                

Supervise a total of 14 employees in the assigned restaurant. Is responsible for the overall Repair/Maintenance needs, cleanliness, direction, coordination, and evaluation of the C ² Steak and Seafood Restaurant.  Carries out supervisory responsibilities in accordance with the organization's policies and procedures. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems. Conducts monthly beverage inventory, settles variance reports, and updates theoreticals daily.

 

Qualifications

To perform this job successfully, an individual must be able to perform each essential duty satisfactorily with or without reasonable accommodation. Must be adept at problem/resolution negotiations, employee and guest relations. Must have fine dining experience.The requirements listed below are representative of the knowledge, skill, and/or ability required. Must possess strong computer skills including Microsoft Word, Excel, Outlook and OpenTable required.

 

Experience and/or Education                                                               

Bachelor's degree (B.A.); or equivalent combination of experience and education. Three years of fine dining experience in a high volume al la carte restaurant as Manager or Maître D'.  Strong wine knowledge is a must.

 

Age Requirement

Must be at least 21 years of age.

 

Language Skills                                                            

Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals.  Ability to write routine reports and correspondence.  Ability to speak effectively before groups of customers or employees of organization.

 

Mathematical Skills                                                   

Ability to work with mathematical concepts such as probability and statistical inference, and fundamentals of plane and solid geometry and trigonometry.  Ability to apply concepts such as fractions, percentages, ratios, and proportions to practical situations.

 

Reasoning Ability                                                         

Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations.

 

Certificates, Licenses, Registrations

Cache Creek Casino Resort Tribal Gaming License.

Responsible Beverage Service (RBS) Certification.
