Kamehameha Schools (KS) Maui is one of three (3) campuses in our K-12 education system and home to 1,100 students and 250 faculty and staff. We are seeking Cooks to support our Maui Campus Food Services team and provide locally sourced 'ono (delicious) meals for our K-12 haumana. Our Cooks will be self-starters and team players, with a strong sense of Aloha (love or compassion) for our students, faculty, staff, team, and the meals that are prepared.  We desire candidates who model ku'upau, and are aligned with KS' core values of pilina (fostering of meaningful relationships, particularly to our community and to the 'aina). 

This is a 11 month, full-time position with a Monday through Friday 6:00am-2:30pm work schedule.  *This is subject to change based on programs and varying events.

Job Summary

Responsible for the preparation, timeliness and quality of meals.  Assists Sous Chef. Directs kitchen operations during absence of Sous Chef and Executive Chef. 

Essential Responsibilities

  • Assists Sous Chef as directed during meal preparation, with cooking, baking, pantry and in clean-up.
  • Assists with ordering of product related to menu preparation.
  • Follows proper food handling and sanitation procedures including but not limited to the storage and handling of raw and left-over food products, the sanitizing of equipment and utensils, and personal hygiene practices.
  • Communicate and distribute work assignments to insure timely meal production as well as to coordinate kitchen operations in the absence of the Sous Chef and Executive Chef.
  • Utilizes various cooking methods (e.g. grill, griddle, convection steamer, tilt skillet, steam kettle, food chopper, slicer, mixer, convection oven, combi oven, etc.) to prepare meals.
  • Responsible for training of Cook III and IV in all areas of the kitchen.
  • Assists and coordinates the preparation of special functions, take-out meals, including the distribution and return of equipment and utensils. 
  • Provides input at Food Production meetings on operations, menus, recipes, inventory, etc.

Position Requirements

Minimum Qualifications - An equivalent combination of education and experience may substitute for the requirements listed.

  • High School Diploma/Equivalent.
  • Minimum 3 years of commercial cooking, baking or pantry experience.
  • Valid Driver's License
  • Ability to obtain the National Food Safety and Sanitation Certification within the first two weeks of start date.
  • Proven interpersonal and leadership skills required to effectively communicate and distribute work assignments to insure timely meal production as well as to coordinate kitchen operations in the absence of the Sous Chef and Executive Chef.
  • Knowledge of and experience in various cooking methods (e.g. grill, griddle, convection steamer, tilt skillet, steam kettle, food chopper, slicer, mixer, convection oven, combi oven, dough divider, etc.).
  • Ability to understand and follow written and oral instructions.
  • Good knowledge of measurements and conversions for taking inventory, ordering, and scaling recipes according to daily count.
  • Ability to perform work under pressure due to responsibility for food preparation deadlines and volume and for directing other cooks.
  • Basic computer knowledge and understanding of Excel and Word.
  • Ability to work a flexible schedule including evenings and weekends.

Preferred Qualifications

  • Associate's Degree in Culinary Arts/Pastry.
  • Institutional cooking experience.
  • Serv Safe Food Safety Certificate.

Physical and Mental Requirements

  • Frequently stand and/or walk, write by hand, and lift and/or carry items up to 50 pounds; push and/or pull objects that weigh up to 300 pounds.
  • Occasionally twist, bend, stoop, squat, kneel, and reach for supplies and equipment.

Working Conditions (including environmental conditions)   

  • Work is conducted in close proximity to hot equipment in humid surroundings.
  • Work is typically conducted Monday through Friday at normal business hours but evening and weekend hours are often required for special events.
